Tuesday night I tried a completely new recipe, chocolate soufflé, and I’m calling it a success!
I baked them as part of a monthly baking challenge from one of my favorite recipe/cooking bloggers, Sally’s Baking Addiction. I actually learned about Sally’s monthly baking challenge last year in January; Faithfully printing out the challenge recipe each month…. I never made even one. Not one month’s recipe! I know you are so impressed.
This record ranks right up there with my record on New Year’s Resolutions, if that tells you anything!
Baking challenge met: chocolate soufflé
But, Tuesday night, I carefully read about the techniques, printed the recipe, stopped at the Piggly Wiggly for a few ingredients I needed, and after supper, I whipped up these soufflés. AND, they were pretty good. I am not a big chocolate fan, so while I’m not likely to make them again for us, they did show me I could accomplish the techniques. And they were not nearly as difficult as I thought they would be. Chocolate soufflés are definitely something you should try! They tasted good; like a super light cake.
How to make chocolate soufflé
It only took seven basic ingredients and about 45 minutes to make these! Separating the eggs is probably the hardest part – so easy! After melting a fancy chocolate bar with some butter, slowly in the microwave, whisk it until combined. Whisk in the egg yolks, vanilla, and salt into the chocolate-butter mixture.
Put the egg whites into your mixture with a tiny bit of cream of tartar until they start to form peaks. Continue to beat while adding in sugar, until you have stiff peaks. Put the egg white mixture into the chocolate mixture and FOLD it together carefully, until combined. Stick it into the fridge while you prepare the pan and the oven heats up.
Butter STRAIGHT SIDED ramekins, like in the photo, and dust them with granulated sugar. Put the soufflé’ mixture in, leveling it off, but adding a little channel around the edge (check out the Sally’s Baking Blog for a great video and step by step instructions). Bake as directed and serve immediately, as directed – I can testify that they do fall down into themselves after a while. Still tasted the same, but apparently its the big deal to serve them all puffed up!
It was amazing to me that something with no flour in it could have the texture these had! You should really try them. I should have taken a picture of how they looked on the inside, but… I did not.
The bigger lesson, for me at least, is that I ACTUALLY DID THIS.
I didn’t wait for a day when the lighting would be perfect to take great images of the prepared recipe for the blog. I didn’t wait until I could find fresh raspberries to make it look even more yummy. Plus, I even persisted when my husband acted like, “why are you making a dessert on a Tuesday night?”
I had to JUST DO IT!
Sometimes you just have to DO IT. I know this would probably have greater impact on my life if I would JUST DO IT – like work out, or go walking, or finish a project, but… I really have to count the little victories some days!
Some days, you just have to accomplish something a bit more industrious than managing to binge watch Bridgerton, or The Crown, or Jack Ryan in three days!
For taking the time to shoot a photo and email it to the Sally’s Baking Challenge email, I received some nearly immediate gratification! Ideal for an approval addict like myself!

Yes!!! So happy. They were so nice to say the powdered sugar was a lovely finishing touch, weren’t they? Even if it was just the easiest suggestion they gave me! I mean, I did have to find the powdered sugar AND my little sifter in a hurry, which may count for GOING THE EXTRA MILE….
