I may never make salsa again! My daughter made salsa with homegrown farm-fresh vegetables. My daughter made salsa from our own homegrown produce last Sunday that is SO GOOD! It’s not a groundbreaking recipe or anything, but she used mostly freshly harvested veggies from our garden, and the difference fresh produce makes is just incredible! I admit that it’s all I ate Monday evening and it was the highlight of my night! (Of course, washing, drying and shearing a stinky, geriatric, overgrown border collie was never gonna be much competition!)
I also ate it for lunch today. I’m trying to think of how I can beat my husband home to finish it off tonight before tending to yard and garden chores….
I think I could live on salsa.
So, anyway, Sunday, Emma started out wanting to make some Cowboy Caviar, and her main aim was to use some grilled corn in it. So she grilled and then cut off and added the fresh, grilled corn kernels to the other ingredients of tomatoes, black beans, red onion, red bell pepper, banana pepper, chopped cilantro, and a couple of jalapenos. The colors were so pretty together! I just had to get my camera out and get a pic! I’m so proud of her for such a great combination!
She pumped it up with some Mexican fiesta rub spice we have using in all our Tex-Mex cooking, along with some lime juice. The grilled corn added another layer of flavor – we will have to add more next time!
She intended it to be a snack before our meal for some house guests, but we never managed to push them into eating it… were we hoarding it for ourselves? Hmmmm. We will never admit it! Between the three of us, it’s nearly gone!
Use some of your garden goodness, or some from a friend or farmers’ market for some summer salsa this week! My recipe for salsa is in our family cookbook, which you can get online!
